@Cris_Ard, the next two are for you, my friend. Mesquite charcoal is damned hard to catch at that elevation, trust me. We actually smoked the steak for a short time while the coals were getting up to temp. Smoked Tomahawk Ribeye...Mmmm.
Of course, we caught some nice Rainbows (I caught several wild Browns, but I put them back--I don't keep wild fish). These were stuffed with hickory bacon, sauteed onion, & Italian breadcrumbs--some other things that I don't quite remember...Note the WhistlePig...that's why I don't remember exactly what we put in them. We brought a smoker with us and smoked that Andouille, too. The Coconut Rice is quick & a great, sweet counter to the spicy sausage & stuffed/pan fried trout.
