Looking for ideas to take the wife on a 25th anniversary trip next May/June. We have been to a lot of places in the Caribbean via cruise, so was looking for something different that isn't more than an 6-8 hour flight away. We are open to lots of ideas. We have lived in the Carolinas for a LONG time, so looking to get a different experience somewhere else. I have listed some of the things we like to do below. Any help would be greatly appreciated. Trying to really find that special place to take her that meets some of the criteria below:

We are foodies (Seafood/Italian/French)
Love beer/wine tasting
Love exploring charming smaller towns/cities
Really nice VRBOs or resorts
Awesome Landscapes
Cool pubs
Live Music
Weather 40-80 degrees
Kinds of places we have enjoyed: Napa, Bar Harbor, Charleston, Savannah, New Orleans, Asheville (getting a little to liberal now though), Portsmouth NH, Annapolis MD, Nashville TN, Scottsdale/Sedona AZ
Things we don't like:
Museums
Hiking
Skiing
Huge Cities
Tons of traffic
Large Crowds of people
Too many weirdos
Too much crime
Weather below 40 degrees or above 80 degrees
Places we don't enjoy: Chicago, NYC, Los Angeles, Las Vegas, Atlanta (sorry), Washington DC, Baltimore, anywhere in NJ, Ocean City, Disney, Amusement Parks in general

Charlottetown, Prince Edward Island

Iceland (Maybe too cold and not much to do)
