Fake Snap Throw Back Screen Question

So while I didn't play at a CFB level I played LB in high school, and I feel like I have a fairly comfortable understanding of football schemes. I've seen Clemson and a handful of other teams run this play, and for the life of me I can't understand how in the world this play works.

Why in the frick wouldn't the defense notice that the entire OL hasn't moved? One of the announcers said the defense thinks the offense false started. If that's the case then the whistle would obviously blow. Are you just counting on the defense being a bunch of epic dumbarses?

I love trick plays and creative play designs, but I really don't understand this one.
