Suggestions as to how to cook it. Was planning to blacken it and serve it with a fresh mango salsa. Never cooked this fish before. Lady at Crosby’s (Folly Beach) said it’s a lot like grouper. Any advice would be greatly appreciated. Of course, I’m at a beach condo, so my options are somewhat limited. I’ve got Old Bay, butter, lemons, and a homemade mango salsa that tasted amazing when I made it 3 hours ago (probably better now that it’s had a chance to marinade a bit).
