I just went to the Ohio Eggfest and got some wood chunks from Kentucky bourbon barrels. Am trying to figure out what to use it for. Am thinking of getting some boneless chicken thighs (with skin) with salt, pepper, smoked paprika, and garlic powder. Wondering if any of y’all have experience smoking with this stuff. I’m thinking it might be too strong for fish, but I do think it would be great with chicken or pork.
