ITT suggest a Spring Family vacay destination for my family...

My daughter's middle school Spring Break is March 21st through 25th 2016... A few details:

• Saturday to Saturday
• Being in Western NC, I'm sure we would love to leave some of the cold weather behind and enjoy something a little warmer
• Budget of somewhere between $3k-5k
• Ages: 42, 38, and 13
• Generally prefer outdoor activities: backpacking, hiking, the beach, biking, etc...
• Great food is a must

Just looking for some ideas from others of great Spring vacay experiences they've enjoyed...
