OT - Chili recipe

I figure we’re good for one of these annually but I cannot find the thread from last year. So, here I am, just a man with an empty crock pot starting a new thread. Looking for some good chili recipes that are not limited to traditional chili.

I’ll go first:
Dice 3 onions, throw them in a ditch oven with butter and olive oil. Medium heat. Get them soft and starting to brown, then add 1 diced bell pepper (whatever color you want) and 2 diced jalapeno. Continue cooking and sweating these, till you've got good color.

Add 2 lb ground beef, and cook till brown.

Try and remove as much grease as you can. (soak up with paper towel, leave only the minimum amount of fat)

Add a 28 oz can of diced or crushed tomatoes, and 16 oz of generic tomato sauce.

Add and stir :
3 tbsp cumin
3 tbsp chili powder
1 tbsp salt
1 teaspoon cayenne
1 teaspoon paprika
1 teaspoon coriander
1 small can of chipotle peppers in adobo sauce (run through these peppers with a knife, but use the sauce as well)
14 oz can kidney beans
14 oz can black beans
14 oz can pinto beans.

Stir it up, throw it to low heat, and simmer forever
