The Greer/Lyman Metroplex
Smoked a small chuck roast on the 23" WSM on Wednesday. Treated like a Brisket, since it comes off the cow directly adjacent. Came out tender and delicious. Served with a salad of Romaine, cucumber, celery, onion....and a Clemson Bleu Cheese Dressing.

Got a couple of Wagyu Denver Steaks (@TigerJR is the man) ready to go on shortly. Will grill some Pineapple Slices alongside, baked potatoes to go with.
