We don't cook a lot of fried food, but will be frying shrimp for shrimp tacos at the NC/USCjr game. We live in Charlotte and my daughter's boyfriend is a UNC grad. We figured, what the heck, and will be giving a tailgate for about 30+. Daughter (Clemson grad -- good girl) is in Law School at Wake and 25 of her friends are driving down from Winston Salem and there will be 5 or so from Columbia -- yes coot fans, but the tailgate will be all Clemson.
anyway, I have a good cooker with fryer, but am not sure of the breading mix. I tried something out this weekend, and it was way too mealy/bready and not crisp. I mixed 1 cup corn meal, 2 bags of cabelas fry mix, 2 cups of flour and 3 bags of tempura fry mix. Frankly, it sucked and was a waste of $15.
Any ideas for a good fry batter for fried shrimp? Any help would be appreciated.
