Brisket burgers.

There's a new butcher shop in Pendleton (PF Meat Co. Butchery and Market) that has great stuff.
A friend of mine suggested their pre-made brisket burger patties.
Went and asked for them. They had four left. Guy behind the counter recommended cooking on the cast iron skillet, turning the grease into gravy, and then putting it over rice for the classic hamburger steak.
Absolutely sublime.
I'm considering writing those two guys into my will for those suggestions. Because this is now going to be a go-to for sure.
