Turkey
I normally fry a turkey for Thanksgiving. My kid has asked that I smoke a turkey this Thanksgiving. I've smoked ribs, butts, briskets, prime rib, and chicken. I've never smoked a turkey. How hard is it? I'd be concerned with how long it'd take to get such a big bird cooked all the way through?
It'll likely be about a 16lb bird.
