2500 sf house - 2 stories - open floor plan

Google Mesh Wifi 4 units
Apple/Windows OS mix
Looking to install a switch. The house was pre-wired to most rooms. Up to this point I have relied on wi-fi mesh exclusively. However, items on network keep increasing: cameras, speakers, lights, game systems, smart TVs, etc. Plus, the wife is working from home now using work vpn/virtual desktop. It seems like a good time to transition some devices to hardline. I also want to reduce some reliance on cloud. I've done some preliminary research. My comfort level is moderate. However, I am prone to overkill in my solutions. Trying not to go full Gene Hackman Enemy of the State here.
