I think an employer that requires you not to is an asshole.I think that it's the employer's prerogative to dictate letterheads, power point color pallets, zoom backgrounds, email signatures used for official communication. Do whatever you want with your personal communication.

We have a vendor and their main contact is named Kelly. Everyone in our company who emailed with Kelly assumed he was a female and when we corresponded with his co-workers, we referred to him as she/her. It wasn't until one day that I picked up the phone and called him that I realized he was a male. Just saying, it would have been helpful to know that so we weren't embarrassing ourselves. I just don't see what the big deal is.

I don't think that this is that big of a deal, but I can definitely see how it dovetails into the overall initiative that is being pursued. The admin is being thorough. Whether that's a good thing or a bad thing depends on your POV, of course.... Though I suspect they hope people who are bothered by it will leave.
Besides it being Trump's administration, it sounds like it would be a terrible place to work with so many mandates and micro-management. I've been fortunate that I've been able to work from home most of my career outside of my six-year stint at the Home Depot Corp office, plus a short time with my current job until they closed the Atlanta office. I don't think that getting people to quit was of primary concern, but if you are bothered that much by this and you do, I 100% think that the admin would view it as a positive.
