Apologies for jumping the gun here, but spent part of my afternoon cooking up a brine for the turkey I was assigned to cook for the in-laws family thowdown. Have to get the turkey in the brine later tonight, because I will cook it tomorrow (so I don't have to get up at 3:00am on Thursday).
