A thread got me thinking about how every guy needs a "go-to" dinner they can nail.

I'll start: Pasta Puttanesca
I never use a recipe for this. super simple, super flavorful, super easy
get your pasta water boiling
in a pan sauté onions, garlic, and whatever else you have in the fridge - popular candidates are (all chopped): anchovies, roasted peppers, kalamata olives, banana peppers, tomato paste, capers, preserved lemons, Calabrian chiles.
drop your pasta in the boiling salted water.
add a little pasta water to the sauce if you need to loosen it a bit.
finish the pasta in the pan with the sauce.
plate and add some fresh parsley (flat not curly) and some grated cheese.
serve with some crusty bread and a nice glass of red wine.
start to finish takes 15-20 minutes depending on how long the water needs to boil.
I make this twice a month minimum.
