Will try a new rub this time. I am going to first use a mustard and pickle juice "rub" followed by something like the following:
- Ground pepper
- Lawry's
- Kosher salt
- Garlic powder
Will pull and wrap in paper at 160. Then when it gets to 203, will wrap in a towel and put in a cooler for at least an hour.
Open to any thoughts?
