OT: What meats are you preparing over the next week?

We have the TX game, Christmas Eve and Christmas Day all coming up. What meats are you cooking? Here are mine:

Clemson - Texas game: Snake River Farms wagyu (Gold) brisket (16-18 lbs) and Snake River Farms Kurobuta whole pork shoulder. Smoked on the pellet grill. First time doing their whole pork shoulder.

Christmas Eve (one side of the family): Two prime whole beef tenderloins smoked on the pellet grill and then seared on the BGE. Meat requested by family (ie not my selection).

Christmas Day: Two Snake River Farms wagyu tri-tips. Sous vide for 4 hours then sear on the BGE. Sous vide minimizes tending while we enjoy Christmas morning with the kids.
